There may be a few people around that remember a little brick and mortar place here in the Ohio Valley called Leonardo’s.  It was named after my maternal Grandfather who along with my Grandmother had a little Italian American place in Baltimore.  Their philosophy was to do everything from scratch with the best ingredients.  We did the same.  But back then our diet was not the Paleo/Primal one we follow today.  Nope, we used plenty of grains, high gluten bread flour, and sugar!  

Having experienced first-hand the benefits of eating without those things, as well as discovering and eliminating the many other foods that caused us and others difficulties, we became convinced of the benefits of understanding that what we eat really matters a lot.  We “Paleoized” many of our favorite meals and spent countless hours over the years experimenting and modifying recipes.  This was particularly arduous when it came to the baked goods and other desserts.

We love cooking together, but we still wanted to enjoy eating out once in a while.  It isn’t easy to eat a diet like ours at most restaurants.  We got tired of only being able to order the same few things, and even then they weren’t up to our highest standards of being sustainably raised, organic, free of all objectionable ingredients, etc.  And I am sure that we are probably known as “those picky eaters” at our regular haunts.

Having reached the fall of life, and considering how we wanted the later chapters to be written, it dawned on us to combine our love of cooking, of eating healthy AND delicious food, and our joy in sharing meals and what we have learned with others.  The path was obvious.

We thought the hard part would be procuring the trailer and the licensed warehouse, and navigating the regulatory maze.  Boy were we wrong!  The hard part, and what contributed to almost a year’s delay, was procuring the products we demanded through the traditional food service distribution channels.  So many took our lists and said, “We’ll get back to you.”  The most common thing we heard was, “No one else is doing anything like this.”  To which we replied, “Exactly!’  Nevertheless, we eventually partnered with the right producers and distributors.  So here we go!
