We are proud to use Oishii shrimp. This is a product about which our thinking evolved. We used to believe that only wild caught shrimp, of course with no additives such as sodium bisulfite and tripolyphosphates, was acceptable. But then we learned that harvesting shrimp in the wild can be destructive to their environment and that of their neighbors. Also, by-catch of non-targeted species can be a problem. We learned that as in most industries, there are certifying agencies that hold honorable producers to the highest standards of best, sustainable, health, and quality practices, and that Oishii meets the highest of those standards. Furthermore, wild caught shrimp are usually frozen on the boat, transported to the processing plant, thawed, cleaned and then re-frozen. Oishii shrimp are transported to the plant live in special trucks, and immediately processed and frozen. We taste tested Oishii against wild caught, and well, there is simply no comparison.
